Method
- Blend 1 cup oats in the blender on high until it reaches powder consistency
- Add blended oats to a bowl and mix with water, let sit at room temperature for 30 minutes or prepare the night before (preferred)
- Preheat oven to 350 degrees.
- In a separate bowl mash up bananas and mix with the egg and vanilla
- Give the oats a stir and mix in salt, beet powder, baking soda, and baking powder.
- Mix all ingredients together until completely incorporated. This step will take longer depending on how much water the oats were able to absorb in step two.
- Shape 1 inch rounds with wet hands and create an indent in the middle. The dough should be moist but not sticky, and moldable with wet hands.
- Place on a parchment covered baking sheet and bake at 350 for 10-12 minutes.
- Let cool and store in an air tight container in the fridge for optimal freshness
