Blend 1 cup oats in the blender on high until it reaches powder consistency
Add blended oats to a bowl and mix with water, let sit at room temperature for 30 minutes or prepare the night before (preferred)
Preheat oven to 350 degrees.
In a separate bowl mash up bananas and mix with the egg and vanilla
Give the oats a stir and mix in salt, beet powder, baking soda, and baking powder.
Mix all ingredients together until completely incorporated. This step will take longer depending on how much water the oats were able to absorb in step two.
Shape 1 inch rounds with wet hands and create an indent in the middle. The dough should be moist but not sticky, and moldable with wet hands.
Place on a parchment covered baking sheet and bake at 350 for 10-12 minutes.
Let cool and store in an air tight container in the fridge for optimal freshness
