Nutrient Dense “Steak & Queso” Skillet

Making a Mexican style dish at home has never been my go to. I crave an outdoor patio, endless chips and salsa, and even splurge on a blended margarita. Until I tried this recipe. My family knows I can make a mean sourdough flour tortilla but I flopped when it came to tacos. This recipe beats all of that! Hardly any prep when preparing the fresh pico and all the flavor comes together seamlessly.

Nutrient Dense "Steak & Queso" Skillet

A nutrient packed one skillet dinner the whole family can agree on!

Ingredients
  

  • 1-2 lbs Steak (I used Flank)
  • 2 cups Jasmine Rice
  • 1 Chopped yellow onion (divided)
  • 2 Cloves garlic
  • 2 tbsp Tomato paste
  • 1 tbsp Italian seasoning
  • 1 tsp Tajin (optional)
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 jar Primal Kitchen Dairy Free Queso (or queso of preference)
  • 1 cups Water
  • 2 cups Chicken Bone Broth (Or stock)
  • 3 tbsp Avocado Oil (Or a high heat oil)
Steak Seasoning
  • 1 tbsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Papricka
  • 1/4 tsp Black Pepper
Fresh Garden "Pico"
  • 1 Jalepeno
  • 1 Tomato I used a
  • 1/2 Chopped onion
  • 2 tbsp Chopped Fresh herbs Cilantro, Oregano or Parsley (based on tolerance)
  • 1 tbsp Lime Juice

Equipment

  • 12 inch skillet stainless steel pan will work just as well

Method
 

Prepare Steak
  1. Prepare your steak by slicing into 1 inch strips
  2. Add to a bowl with 1 tbsp salt and 1 tbsp oil, toss and refrigerate.
Into the Skillet
  1. In a hot skillet add 2 tbsp oil, and 2 cups of uncooked rice. Let cook until toasty about 3 minutes.

  2. Add 2 tbsp garlic and half chopped yellow onion and cook until fragrant. 2 minutes
  3. Stir in tomato paste, salt, pepper and tajin.
  4. Slowly pour 2 cups bone broth and cook for 10 minutes covered over medium heat. Stirring occasionally.

  5. Add splashes of water if rice begins to dry.
  6. Once cooked turn off burner and keep covered.
  7. In a separate pan set to medium high heat, add steak and steak seasonings and cook for 5-7 minutes flipping frequently. Cook until desired browning.

  8. Layer Steak over the rice skillet and drizzle queso.

  9. Add the garden "pico" and garnish with fresh herbs.

  10. Serving options include lime, sour cream, and flour tortillas.

Notes

This is a great opportunity to use what fresh herbs you may have growing in the garden. I used Oregano and basil because my palette cannot withstand cilantro.
Queso really ties this meal together. If you can tolerate dairy go ahead and use a dairy queso. Our family loves utilizing primal kitchen and tolerates the dairy free option much better.
