Simple Garden Pasta Salad

The perfect herb inspired pasta salad made with sourdough pasta and fresh garden finds to enjoy after a hot day!

Ingredients
  

Ingredients
  • 12 oz Pasta (I used Bionature sourdough fusilli)
  • 1.5 cup Green Squash (quartered)
  • 1.5 cup Fresh Mozzarella (cubed or spheres)
  • 1 cup Sun dried tomatoes* or fresh (halved) cherry tomatoes (Julienne cut is best)*
  • 1/2 cup Fresh basil and oregano (chopped)
  • 1/2 cup Red onion (diced)
  • Drizzle of Balsamic for serving (optional)
  • Grated Parmesan for serving (optional)
Pasta Dressing
  • 1 cup Olive oil
  • 1/4 cup White wine vinegar
  • 1/4 cup Balsamic Vinegar
  • 1 tsp Salt
  • 1 tsp Garlic Powder
  • 1 tsp Black pepper
  • 1 tsp Paprika

Method
 

  1. Bring a large pot of water over medium high heat to a boil and cook pasta.
  2. While waiting on the water and pasta, start chopping your vegetables, cheese and fresh herbs and add to a large bowl
  3. In a separate bowl combine your oil, vinegars, and spices. Mix well.
  4. Once the pasta has finished cooking, strain well and cool slightly. Add to your large bowl with vegetables
  5. Incorporate dressing, folding the mixture over until well combined and all the noodles are saturated.
  6. Cool in refrigerator until preference.
For serving
  1. Garnish with parmesan cheese, balsamic drizzle, and fresh basil
