Caramelized Pumpkin Prosciutto Pizza

Ingredients
  

  • 1 lb Pizza dough
  • 2 Medium onion (Caramelized)
  • 6 slices Prosciutto
  • 1 cup Havarti cheese
  • 1/4 cup Goat cheese
  • 1/2 cup Mozzarella fresh is best
Pumpkin Sauce Base
  • 1/2 cup Pumpkin puree
  • 2 tbsp Ginger Fig Jam
  • 1/2 cup Caramelized onion
  • 1/4 cup Heavy cream
  • 1 Pinch crushed red pepper

  • Imerson blender or blender

Method
 

Prepare the pumpkin base. (good for two, 16 inch pizzas)
  1. Start by halving and slicing your onions to caramelize. Add 2 tbsp oil or butter to a skillet and set on medium to low heat. Cover and stir occasionally adding splashes of water if the onions start to dry.
  2. After the onions have caramelized take 1/4 to 1/2 the amount and place in a blender or jar.
  3. Add pumpkin, jam, heavy cream, and blend well, adding splashes of water until desired thickness.
  4. Add crushed red pepper (if desired),garlic powder, and salt to taste.
Dress the dough
  1. Shape room temperature dough and place onto stone or pizza sheet.
  2. Spread pumpkin base onto pizza or pizzas (good for two pizzas)
  3. Rip three pieces of prosciutto and spread prosciutto onto pizza.
  4. Layer cheeses onto pizza.
  5. Layer caramelized onion onto pizza.
  6. Baked until golden 12-18 minutes depending on oven temperature.
  7. While the pizza cooks, crisp the remaining three pieces of prosciutto on a skillet.
  8. Top with crispy prosciutto and fresh basil

Notes

Replacements for Ginger fig jam can be bacon jam or apple butter, try to think fall flavors!
A drizzle of balsamic glaze on top of the pizza adds a sweet tangy pop. 
If you prefer a crispy onion, instead of adding to pizza toppings, continue to crisp remaining onions and add to the pizza after it is cooked.
